OCTOBER

O suns and skies and clouds of June,
And flowers of June together,
Ye cannot rival for one hour

PREPARING PUMPKIN SEEDS.

With an adult helper, clean the seeds & let them dry for a few days. Seeds can be eaten raw, shell and all, or boiled for a few minutes in salty water and then fried or baked in oil. Then, they can be salted or sprinkled with spices. They can also be used in breads, muffins, cakes, sauces (such as pesto), and other recipes. Hulled pumpkin seeds are called pepitas. Pumpkin seeds can be stored for a few months in a cool, dry place but will keep longer if refrigerated. They may also be frozen.
